Ingredients
Method
- Preheat oven to 190C/375F
- Grease an ovenproof dish with olive oil spray.
- Place the chicken on the bottom of an oven proof dish.
- Mix together the olive oil, lemon juice, paprika, salt and pepper.
- Pour over the top of the chicken, turning it over so both sides are covered.
- Bake for 30 minutes, turning the chicken after 15 minutes. Ensure it is cooked through.
- Cook the broccoli and carrots as usual, glazing the carrots with honey.
So here’s the recipe… Serves 2
4 chicken tenderloins – approx 250g
1/2 tablespoon olive oil
2 tablespoons lemon juice
1/2 teaspoon paprika
Salt and pepper
5-6 baby broccoli
1 cup carrots, sliced and cooked
2 teaspoons of honey
