Citrus baked chicken with baby broccoli and glazed carrots

Ingredients
  

  • 4 chicken tenderloins
  • 1/2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp paprika
  • 1 pinch salt and pepper
  • 5-6 baby broccoli
  • 1 cup carrots, sliced and cooked
  • 2 tsp honey

Method
 

  1. Preheat oven to 190C/375F
  2. Grease an ovenproof dish with olive oil spray.
  3. Place the chicken on the bottom of an oven proof dish.
  4. Mix together the olive oil, lemon juice, paprika, salt and pepper.
  5. Pour over the top of the chicken, turning it over so both sides are covered.
  6. Bake for 30 minutes, turning the chicken after 15 minutes. Ensure it is cooked through.
  7. Cook the broccoli and carrots as usual, glazing the carrots with honey.
