Citrus baked chicken with baby broccoli and glazed carrots

Ingredients
  

  • 4 chicken tenderloins
  • 1/2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp paprika
  • 1 pinch salt and pepper
  • 5-6 baby broccoli
  • 1 cup carrots, sliced and cooked
  • 2 tsp honey

Instructions
 

  • Preheat oven to 190C/375F
  • Grease an ovenproof dish with olive oil spray.
  • Place the chicken on the bottom of an oven proof dish.
  • Mix together the olive oil, lemon juice, paprika, salt and pepper.
  • Pour over the top of the chicken, turning it over so both sides are covered.
  • Bake for 30 minutes, turning the chicken after 15 minutes. Ensure it is cooked through.
  • Cook the broccoli and carrots as usual, glazing the carrots with honey.
