Healthy chocolate cupcakes

Servings: 8 cupcakes

Ingredients
  

The Cupcakes
  • 1/4 cup cocoa
  • 1/4 cup coconut flour
  • 1/2 tsp gluten free baking powder
  • 1/2 tsp ground cinnamon
  • 1 pinch sea salt
  • 4 eggs
  • 1/4 cup honey or organic maple syrup
  • 1 tsp vanilla extract or 1/2 tsp vanilla bean paste
  • 1/4 cup melted coconut oil
Chocolate ganache
  • 1 part good quality dark chocolate
  • 1/2 part coconut milk or thick Greek style yogurt

Method
 

The Cupcakes
  1. Preheat oven to 160C/320F
  2. Combine the cocoa, coconut flour, baking powder, cinnamon and sea salt.
  3. Add the eggs, honey, vanilla and oil.
  4. Mix well until smooth and combined.
  5. Spoon into 8 lined cup cake tins.
  6. Bake for about 20 – 25 minutes.
  7. Remove from the oven and allow to cool.
  8. Enjoy alone or with your choice of frosting (see below for my ganache recipe)
Chocolate ganache
  1. Melt the chocolate, mix in the yoghurt/coconut milk till smooth.
  2. Spread over the cupcakes. Mmmmm!
