Healthy chocolate cupcakes

Ingredients
  

The Cupcakes

  • 1/4 cup cocoa
  • 1/4 cup coconut flour
  • 1/2 tsp gluten free baking powder
  • 1/2 tsp ground cinnamon
  • 1 pinch sea salt
  • 4 eggs
  • 1/4 cup honey or organic maple syrup
  • 1 tsp vanilla extract or 1/2 tsp vanilla bean paste
  • 1/4 cup melted coconut oil

Chocolate ganache

  • 1 part good quality dark chocolate
  • 1/2 part coconut milk or thick Greek style yogurt

Instructions
 

The Cupcakes

  • Preheat oven to 160C/320F
  • Combine the cocoa, coconut flour, baking powder, cinnamon and sea salt.
  • Add the eggs, honey, vanilla and oil.
  • Mix well until smooth and combined.
  • Spoon into 8 lined cup cake tins.
  • Bake for about 20 – 25 minutes.
  • Remove from the oven and allow to cool.
  • Enjoy alone or with your choice of frosting (see below for my ganache recipe)

Chocolate ganache

  • Melt the chocolate, mix in the yoghurt/coconut milk till smooth.
  • Spread over the cupcakes. Mmmmm!
