Healthy muffins
Ingredients
- 1/2 cup cottage cheese
- 1/4 cup oats
- 4-5 egg whites
- 1 banana
- 1 small serve pumpkin (cooked and mashed)
- 1 serve each of various fruits to taste
Instructions
- Preheat oven to 175C/350F
- Blend all ingredients until they form a batter.
- Spoon batter into a muffin pan (these won't rise, but don't over-fill)
- Bake for 25 minutes

You can be as creative as you wish with this recipe, adding fruits and flavours to suit your taste.
Due to the high natural sugar content of fruit, keep a close eye on the muffins as they are baking, to prevent them from burning.
