Healthy chocolate cupcakes (who would’ve thought??)

I love chocolate, and anything with chocolate in it, so when I came across this recipe, I had to give it a go – and I’m glad I did!

This one makes 8 cupcakes

1/4 cup (30 g / 1 oz) cocoa
1/4 cup (35 g / 1 1/4 oz) coconut flour 1
1/2 teaspoons (7 g) gluten free baking powder
1/2 teaspoon ground cinnamon
Pinch of sea salt
4 eggs
1/4 cup honey or organic maple syrup
1 teaspoon vanilla extract or 1/2 teaspoon vanilla bean paste
1/4 cup (60 ml / 2 oz) melted coconut oil

  1. Preheat oven to 160 C.
  2. Combine the cocoa, coconut flour, baking powder, cinnamon and sea salt.
  3. Add the eggs, honey, vanilla and oil.
  4. Mix well until smooth and combined.
  5. Spoon into 8 lined cup cake tins.
  6. Bake for about 20 – 25 minutes.
  7. Remove from the oven and allow to cool.
  8. Enjoy alone or with your choice of frosting (see below for my ganache recipe)

Chocolate ganache

1 part good quality dark chocolate to 1/2 coconut milk or thick greek style yoghurt.

Melt the chocolate, mix in the yoghurt/coconut milk till smooth.

Spread over the cupcakes. Mmmmm!
